Butterfly pea tea has an interesting feature - it changes color when in contact with lemon juice. Usually it has a sky-blue hue, but if you add lemon, the color gradually changes first to blue, then to eggplant. It was not possible to depict a lemon on this scale, so the yellow stripe at the bottom of the cup is lemon juice.

Such an interesting story...I am a gardener and will be searching out butterfly peas now...not something I've heard of living in the US --or when I was in Asia years ago! Thank you, Ceresriel!
